One thing that is very important

I teach third, and one thing that is really important is the ability to recognize the coin, even if they can't tell the color or the picture that is on the coin. Basically, if they see the coin on a standardized test, they know that it is a quarter or a dime or a nickle.

I made a sheet that has outlines of the coin-- and the students have to match it to the name or a regular picture of that coin. They can self check by placing the coin over the outline to see if they are right.

Also you can make a matching center where you have a picture of the coin and the students have to match it to the value.

In third grade we have discovery stations where students are given a handfull of coins, and they record how many different ways they can make a dollar out of those coins. That might be too advanced for your kiddos, I'm not sure.

You could also set up a fake store where students have to use their coins to buy things.
