Not Covering all Material

Don't worry. I have never finished everything. Don't feel if you didn't finish a text you didn't teach what you needed to. Education is a spiral the kids will get the same material over and over on different levels. If
you have kids of your own you will see this really clearly and not panic. Each year will be different if you stay on the same grade level.
You should check your curriculum guides to see what you have covered so far and try to get in what you need to get in before the year is up. The guidelines at leat in my school are the bare bones of what should be taught.
As you teach
more you will be more able to see what you can skip in your texts and what you can use to enhance the program.
I used to think the class couldn't move on until each child grasped a concept 100%. Now I have methods to deal with this misconception.
