I got a lot of my management skills from previous mentor teachers, but my favorite one is , "If you can hear my, touch your nose." Then they get quieter and quieter as you get quieter when giving signs. The kids also love playing Simon Says. This is great when they are in line for lunch. They are so ansy, and usually too noisy, so they will still be able to move and get that energy out without talking. Good luck!
