Hey, I don't know what school you go to, but at mine (Ole Miss) they gave us a list of how they wanted everything and what you must include. Do they have a list? Maybe you should ask you instructors how they want it. If it is totally up to you, have fun doing your portfolio! I know it is a lot of work, but it is a reflection of YOU!
