As a teacher, I would not expect a sub to GRADE anything. Every teacher has their own way of figuring marks and grades. HOWEVER, I would expect a sub to check work any 'mark' the questions as right or wrong. I do teach elementary. I would not expect this at 5th grade or above without leaving a detailed answer key! Keep in mind in our school the 1st to 3rd grade teachers 'mark' the students work with the student as soon as they are finished if possible and help the make correction. Every one does it differently. ASK.
