Generally you can take yourself off any lists for certain grades quite easily by calling the schools or the district office (depending on who calls you for the jobs). And I'm sure even with certain subjects you could let
the school know that you would prefer not teaching a subject because you feel you are not strong enough in it (this would mainly apply to jr and sr high school). In elementary most teachers teach all the subject areas so you are not able to only teach certain subject areas if you are subbing.

I know our principal likes to know what the substitute teachers prefer, but also that if necessary

he can count on them for areas they might not normally teach. I think just being willing to try makes you that much more valuable to the administration and the school. I think many principals if not most recognize that we are not all gifted in all areas like music, math, sciences, writing, etc., and sometimes the substitute teacher may end up doing "other" activities or supervising more than teaching.

Unfortunately classroom teachers are not always able to plan when they need time off and then they are thankful that there are substitute teachers who are willing to step in for them.
