Personally, I'd really be happy to start out in your shoes. In some areas, it's so hard to land a job right out of college. My first teaching assignment was a long-terms substitute position in sixth grade. I was extremely happy to obtain that.

I agree that this is a good way to get your foot in the door. Your assistant principal sounds like a very understanding and nice person. I like the idea that he's willing to consider you as a teacher, even though you are a substitute. Some schools keep good subs on as subs, since good subs are not always easy to come by. You could very well walk into a mid-year job. I did this once.
