You could also make up some poetry booklets and then take the kids outside with sidewalk chalk and have them write their favorite poem on the playground. I take my kids into the computer lab where they open up a page in Word and then they move from computer to computer to write nice thoughts about each other. Then I compile them into books and put them in the envelope with their report cards on the last day of the year. Have them write letters to the third graders who will be sitting at their desk come next September.
