We use airdry clay.

In fact, we just did that project this week. In first grade, our curriculum requires them to learn about mountains, hills, rivers, lakes, and plains. I give them airdry clay and a piece of cardboard and put them in cooperative groups. They build an environment with each of those formations, and then they get to paint it. They love it, and it helps them learn the concepts.
