I used to write it with a hyphen. Now I do not. I just spell it - nonfiction. Don't ask me why I changed. I think it is because I saw it written without a hyphen (like you said, you've seen it written 3 different ways) and thought, "Oh, I guess I don't need the hyphen!" If I were you, I'd write it wothout.
