K comes before i and e;
C before the other three- a, o, u.

I make a large bubble letter k on the board and put i and e inside it. Make a large bubble letter c on the board and put a, o, and u inside it.

As far as ck goes, I teach that it always follows a short vowel sound. ke follows a long vowel sound.
