Your district sounds rough. There are some really helpful sites on the web. Wordsearch is always a good distractor. I like to have several different grade levels on hand. Take a long word with several blends and vowels. Put it on the board and challenge the kids on how many words they can make using these letters. No 2 letter words allowed. I like to give points. They always ask what they are going to win. I tell them self-satisfaction and the knowledge that they are smarter than they thought they were.
I think that one principal of the school you had such a horrible day at should be shunned by all subs. If he cannot get subs., those in charge might re-think the way substitute teachers are supported.
