An awareness of audience is under the writing trait, VOICE. A big part of voice is awareness of one's audience, so perhaps you could supplement your teaching of audience with some model texts that are excellent examples of voice. Don't feel like you can not use picture books with your 5th graders to model this, as a matter of fact they will be your best friend in teaching audience. They would love a book like, Diary of a Worm, for example.
