If you have access to a digital camera, show the steps in carving a pumpkin by taking pictures as you do it (with the students doing the work). Then the students will write a sentence to go under each picture (use first, next, then, and last). Laminate it and they will read the book they made all year long.
Also, save your pumpkin seeds. Wash them, let them dry out and then later you can plant them. I had so many seeds that we shared with two other classes. They grow into vines and the students can study them, make a plant life cycle, and take them home.
