One year we watched "It's the Great Pumpkin Charlie Brown". Then I let them write a couple of paragraphs as if they were Linus trying to convince others that the great pumpkin was real. Those were really cute. Another thing I have done is to have them describe a haunted house. The write their paragraph telling what the house looks like, how many windows, etc. After we edit and all that jazz, I have them switch papers. Each kiddo then reads the description and tries to draw the house based on that description. The kids got a kick out of that one and it helped them learn to be more precise and descriptive.
