I also had the kids stay busy with an ABC journal writing in things they learned this year that started with that letter and illustrating it. They also wrote a letter to my students for next year that will go on the desks the first day of school. You could keep them busy writing a letter to their next teacher telling about themselves things they like to do, things they think they will do this summer, what books they've read or genres they like to read, etc. Then I would ask the kids to help out, but only assign a few students at a time and make them rotate every 20-30 minutes so everyone gets a chance. Last year my room was not a smooth as this year, so I started earlier than last year and asked the kids for help.
