Writing Office

I've heard a lot of teachers talk about using writing "offices" in their classrooms. Just from looking I can tell the offices are folders that have writing tips glued onto them and then they are laminated. Students use them to set up a make-shift office on their desks. I am curious as to whether anyone on this board is using them and if so, how are you using them? What do you put on the folders? I've not had the opportunity to really talk to anyone about how they're using them and if they are really effective in helping with improving writing.
