Can she call you the night before? Or at least as she's leaving her house? If she gives you a half hour's notice I bet you can come up with some ideas. In the meantime, since you don't know if she's in till the last minute, if you can't put her to work in the room helping with writing, correcting math tests or listening to home reading, perhaps you can put aside some file folder games that are on your "wish list" and when she comes in she can get started on those.
