Believe me, speaking as a former substitute, leaving plans in detail is very helpful. Your kids will correct that sub or tell her "That's not how my teacher does it...." so try to leave the sub your ways on getting their attention, recess time, lunch times, duties (if any), reward/consequences. It is nice to know the teacher's expectations so the sub can try to work up to the potential of the teacher. The sub can teach, so don't leave simple brainless things to do.
