You should really get your hands on Guided Reading by Fountas and Pinnell. They give lots of suggestions for how to run literacy centers. Another book that they wrote is called Word Matters. Both are EXCELLENT resources.
These are some of the centers that I have:
Big Books
Read and Write the Room (searching for specific words in a word scavenger hunt)
ABC Center (word play)
Writing Center
Listening Center
Word Games
Computer (Reading games)
Buddy Reading
Independent Reading
