you may have a problem with this idea. She is a volunteer and is helping you. If you would like to buy a gift and have the kids make cards that would fly but asking parents to buy gifts for another parent's baby shower
is questionable.

You could phrase a letter as that Mrs. X has donated X hours per week to help the children in the classroom. I would like to throw her a small gathering in her honor. If you would like to contribute to a gift, please send in your donation by X date. This is voluntary. I am asking that each child also make a card to thank Mrs. X for helping in our classroom.
and
if
you are asking for money or a gift for your volunteer, your parents may not wish to double up and give a gift to you at the end of the year. I'm sure that is fine with you but many parents and students want to do something for the classroom teacher and not extra staff or volunteers.
and
hasve you gotten permission from your principal? He or she may not allow you to give a shower to a volunteer on school time. I would check everything out to keep you from having any future problems with administration.
