Simply state the truth without too much information. I would say something like: Resigning to stay-at-home with my baby, hope to return to the profession in the future. I don't really think you need to add the part about having more children.
Ask your current principal & coworkers to write you letters of recommendation for when you are ready to return. That way you won't have to track them down if they move on.
