here's an idea

I don't know how many students you're talking about so this might not be feasible but why not have something like an "authors' celebration"? Each student could read something they wrote during the year (of their choosing); the parents could be invited and after everyone reads their piece or a part of their piece, you could offer a "toast" to their efforts, having the parents and other students join in. You could have pictures around the cafeteria or gym or auditorium of them at work or you could have a slide show running in the background while people mingle for one last time.
