No Worksheets- Problem?

I do not give worksheets or book assignments very often. I try to do a lot of cooperative activities, hands-on activities, etc. I often have a writing workshop where students are working on their own writings. They do
a great job with this! However, I am running into a problem with absent students? What do you do for students who are missing these activities?

I usually just either excuse them or give them a make-up assignment (depending on whether I think they will be able to "catch-up" with that skill in the next days, etc.). However, I have a student who is suspended for a week and when I
was writing down all their missed assignments, I realize I don't have many worksheets/ assignments that I will give the class. However, I am expected to give enough assignments to keep this kid busy everyday.

What do you do when situations like this arise? I gave written assignments and then a lot of additional busy work.
