I agree, but for a different reason... I would definately show them that you can think outside the box, and wouldn't worry so much about conforming to what's already there. If you have a great lesson that is not probability, do it. Just pick something engaging and meaningful. The curriculum website would be helpful in finding out what the kid's background knowledge is (ie. what they've already learned this year).
