Guided Reading, a book by Fountas and Pinnell, has wonderful ideas for centers, whether you actually plan to do guided reading or not. These centers will not work you to death keeping them up or changing them. They are low-maintenance activities that really promote literacy.
As far as the cluster arrangement, I use it for reading and math. For our spelling curriculum, which is a lot of board work, we sit in rows. They can certainly handle sitting in clusters and using self-control if that is what you expect from them. Have great expectations of them--first graders are wonderful! I will remember to pray for you--I had 26 my first year, so I can almost empathize. You are in for a great year!
