This isn't a very fun one, but you could have them write a letter to you. They could tell you about their likes, dislikes, family, etc. You could teach the friendly format with this assignment as well. They could write a friendly letter in the proper format. You could then learn more about them, get a feel for where they are at for writing, spelling, grammar, etc. and they will also get a chance to learn or review the friendly letter format.
