This is going to be my first year teaching first grade but I taught Kindergarten last year and did journals with them It was great. I would give a general topic like...let's write about our pencil. They could draw, write words if that's their level or even sentences. I think 1st grade will adapt to this well. Fridays were free journal writes..they picked the topic. They loved this and looked forward to it. Enjoy!
