Jennifer, you should be able to find lower-level books on the same topics you are covering. The problem I can see with that is whether the books cover the topic in the same way, or with the same details. You can have more-able
students record the reading of the chapters (for extra credit or instead of a quiz) and let these low-readers listen as they follow in the book. Be sure the pace of the reader is NOT fast, or even what they think of as normal, but a little slower. I don't know how you teach, whether it's lecture or group work or packets or whatever, but see if you can get them together in a group periodically
to see what they understand or need help with. If you teach in groups, make the groups heterogenous by ability, so there are high, medium and low students together. Don't let teasing or ignoring happen for the low students, and make sure the higher students are aware that you expect help from them and accomodations for the others.
