I have trouble with purple. I mix the color but because the pasta is a bit yellow, the purple turns out brown - a fine color but where's my purple - and yep the alcohol evaporates in a snap. That's important so that the pasta doesn't become sticky. Try using a variety of shapes as well like wagon wheels, ziti, shells.
